The Emperor Mauritian Deep Blue Papa Clement Finish rum is a unique and innovative spirit that reflects the multiple craftsmanship of its island. This rum is a blend of both pure cane juice rums and molasses rums, with proportions of 40% and 60% respectively. The rums are aged between 5 and 12 years in oak casks before being blended and then placed in Pessac-Leognan Grand Cru Classe casks from Chateau Pape Clement for an additional 7 months.
After bottling, the rum undergoes a final aging process, this time underwater for 10 months off the coast of Brittany. The bottles are stored in a cellar nestled 60 meters below the surface, in a temperature of 11 to 13°C, without oxygen, with a pressure of 6 bars. This unique aging process results in a singular evolution of the rum.
The nose of the Emperor Deep Blue Papa Clement Finish rum reveals tropical aromas of very ripe exotic fruits, with a toasted oak background. The palate is full-bodied, with a fruity and greedy attack, followed by roasted aromas of toasted bread with battery syrup, and caramel-coated pecans. The texture is truly round, with surprising fruity aromas and notes of softly spiced nuts and increasingly roasted fruits.
The finish of this rum is spicy and greedy, with notes of gingerbread, mulled wine with cinnamon and orange peel, and a touch of molasses and liquorice. The use of ex-futs of the prestigious wine of Bordeaux, Chateau Pape Clement, gives this rum another dimension of aromatic complexity. This is a truly exceptional finish for such great depths!
