Typically, Islay malts are heavily peated; after all, about 70% of the land surface is covered by a meter-thick layer of peat. Peat is nothing more than a sediment from organic, partially decomposed material that forms under special conditions in bogs, and there are plenty of those on Islay and in other Scottish regions. In its dried state, peat is combustible and was traditionally used in whisky production to dry the malted barley (also known as kilning). The peaty-smoky flavor of the final product was originally likely an accepted side effect. Nowadays, many distilleries stick to this tradition, even though other fuel sources are available, driven by high demand for that distinctive taste.
