This extraordinary rum was meticulously aged in a continental climate for over three decades in an ex-American bourbon cask marked with the number 15, resulting in a spirit that is a true testament to the traditional wooden Versailles still of the Enmore distillery, bearing the mark MEV (Main Enmore Versailles).
This rum offers a full-bodied and spicy profile, reminiscent of dark chocolate with a hint of chili. The very burnt oak barrel lends roasted and mineral notes, evocative of roasted nuts. A pastry profile emerges, underscored by an almond milk nuance with hints of candied plants. Upon aeration, a harmony between vegetal and sweet spices is revealed, introducing a new pastry component. The almond note, derived from the vegetable, becomes soft and almost milky, while retaining a gentle green quality.
