The rum is distilled from pure crystalline sugar cane juice on September 29, 2019, using a Muller still heated in a water bath. It was then aged for 3 years in 25 ex-Caroni barrels, which previously contained rum, allowing it to develop a unique and harmonious blend of flavors.
The rum offers an alluring balance between a very aromatic brandy, richly fruity and slightly milky, and a spicy woody filled with pepper and vanilla syrup. The palate is treated to an almost creamy, vanilla-like quality, offering a fatty, oily texture, like a sweet spice syrup. The wood offers a great brew of sweet spices, with first vanilla, but also more vegetal nuances, with a candied herbaceous side.
