The S.B.S 2000 Barbados 16yo rum is a unique and unconventional expression, boasting a complex and intriguing flavor profile. Distilled in a pot still by the West Indies Rum Distillery (WIRD) in Barbados in June 2000, this rum was aged for over 16 years before being bottled in Denmark by S.B.S (Single Barrel Selection) in October 2016. With only 224 bottles produced, this limited edition rum is a true collector's item.
The aroma of this rum is truly exceptional, with initial notes of ash and smoke leading to mineral, grilled animal, and iodine flavors. A concentrated almond paste and a hint of rancio follow, intermingling with iodine-infused seafood aromas and more traditional scents of olive and exotic fruits. The profile is reminiscent of whisky, with smoky and almost peaty notes, and a vegetal quality that brings to mind a resinous forest and damp underbrush.
Upon tasting, the adventure continues with strong leather and latex flavors, followed by a round, salty texture. The rum briefly retreats before revealing notes of licorice, molasses, leather, and dark fruit tannins. The toasted wood evokes tar and smoked meats, while the olive mingles with seaweed and dried fish. The addition of wasabi and soy sauce complements the flavors perfectly.
As the rum aerates, the initial solvent-like quality dissipates, revealing notes of wax, latex, leather, iodine, and vegetal flavors. The profile remains slightly unusual, with a touch of camphor and medicinal wood, and a finish of olive, anise, and a final hint of brandied prune.
The rum's final notes are sweet and pastry-like, with flavors of almond, caramel, and rum grand arome. A lingering taste of salt, tapenade, and leather remains, with a final hint of brandied prune. This rum is not simple, but it is certainly funky, and it offers a truly unique and intriguing tasting experience.
